Tokyo-style Sushi
Sushi originated in Edo (now Tokyo) and was
originally made in front of the customer and served by traveling vendors from a
pushcart wagon. It would have been known today as 'fast food'. Fish and
seafood would be marinated or boiled in vinegar and soy sauce to preserve
them while holding their flavor. The rice, too, would be seasoned to
preserve and add flavor. Wasabi, used for anti-bacteria, and pickled
ginger were original condiments for sushi and continue to be today. For over 400 years
sushi has been delicious, nutritious and healthy food.
